Homemade Mexican Salsa

I have not yet tried this recipe, but it was given to me by a very good cook. I plan to try it soon. Unlike ordinary fresh salsa, it has the flavor of roasted vegetables.

Ingredients:

4 Roma Tomatoes, cut into wedges

1 large, sliced red onion

6 cloves of garlic (skin left on)

2 jalapeno peppers cut in half

1 minced scallion

1 bunch of cilantro, leaves chopped

juice of one lime, or lemon

2 tablespoons of olive oil

a hint of cumin

salt and pepper

Put tomato wedges, onion slices, peppers, and garlic (with skin on) into a flat oven tray (or cookie sheet with side). Roast uncovered in 350° preheated oven, for 45 minutes, until vegetables turn a bit golden, but there should be very little black. Let cool. Peel garlic. Put into blender with all other ingredients. Blend very well. Makes about two cups.

The delicious roasted flavor will be evident in the salsa. Serve with chips.
